'Vegetable Frankie is a more popular version of rolls in India. Made with a potato mixture, these are enclosed in a maida roti. VEGETABLE FRANKIE Ingredients ½ cup mixed capsicum strips (red, yellow and green) ¼ medium purple cabbage, shredded ¼ medium cabbage, shredded 4 medium refined flour rotis 1 tablespoon oil + for basting 1 teaspoon dried oregano ¼ cup mayonnaise 1 tablespoon green chutney A pinch of Frankie masala + for sprinkling Chilli-vinegar for drizzling Cutlets 1 medium raw banana, boiled, peeled and grated 2-3 tablespoons boiled and crushed corn kernels 2-3 tablespoons boiled and crushed green peas ¼ teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon Frankie masala Salt to taste 2 teaspoon chopped fresh coriander leaves 1 tablespoon breadcrumbs Oil for shallow-frying Method 1. Heat 1 tablespoon oil in a non-stick pan. Add mixed capsicum strips and sauté for 1 minute. 2. Add purple cabbage, cabbage, salt and dried oregano and sauté for 1 minute. Transfer in a bowl and cool. 3. To prepare cutlets, mix together raw banana, corn kernels, green peas, turmeric powder, chilli powder, Frankie masala, salt and coriander leaves in a bowl. 4. Divide the mixture into equal portion and shape into oval cutlets. 5. Heat some oil in a non-stick pan. Place the cutlets and shallow-fry from both sides till golden brown. Drain on absorbent paper. 6. Heat a non-stick tawa. Place each roti, drizzle some oil and roast till light slightly crisp. Transfer on the worktop. 7. Mix together mayonnaise, green chutney and a pinch of Frankie masala in a bowl. 8. Spread some mayonnaise-chutney and sprinkle some Frankie masala on one side of each warm roti. 9. Put some sautéed vegetable mixture and 2 cutlets in the center of each roti, drizzle some chilli-vinegar on top and roll it. 10. Wrap half of each Frankie with colourful tissue paper and serve hot.
